Culurgiones

They are our first product, we chose them because:

It is the fresh stuffed pasta par excellence of Sardinia.
It is a typical pasta format of the Sardinian agro-pastoral tradition; a thin puff pastry that hides inside a cream of boiled potatoes, typical cheeses and mint, but which also lends itself to new interpretations.
It has an ancient history. Originally from Ogliastra, culurgiones were traditionally considered not just a food, but a precious gift, a sign of esteem, respect and friendship.
According to custom, culurgiones were consumed only on special occasions: at the end of August, to propitiate the new agricultural year or all soul’s day (they were in fact considered amulets to protect the family from mourning).

Traditional Handcrafted Culurgiones

Ingredients

Puff Pastry (35% of the product): Durum Wheat and soft wheat flour, water. Filling (65% of the product): Fresh Potatoes, extra virgin olive oil, cow’s and sheep’s chees, salt, garlic, mint. Contains: gluten, dairy milk.

For 100 gr :
Energy Kcal 188,04 / Fat gr 7,34 of which Satured fatty acid gr 3,87 / Carboydrates gr 22,25 / Proteins gr 7,12 / Salt gr 0,75. A balanced and healthy meal, emblem of the mediterranean diet.

Cook the Culurgiones in boiling salted water and turn them gently. Cooking time, 2 minutes from the moment they come to the surface. It is recommended to season with tomato sauce and grated cheese of 18-24 months superficie. 

Handcrafted Wholemeal Culurgiones

Ingredients
Puff Pastry (35% of the product): Durum Wholemeal Wheat Senatore Cappelli, water. Filling (65% of the product): Fresh Potatoes, extra virgin olive oil, cow’s and sheep’s chees, salt, garlic, mint. Contains: gluten, dairy milk.

For 100 gr:
Energy Kcal 175,53 / Fat gr 7,35 of which Satured fatty acid gr 3,87 / Carboydrates gr 20,98 / Proteins gr 6,66 / Salt gr 0,75. A balanced and healthy meal, emblem of the mediterranean diet.
